Healthy and delicious Dark Chocolate Macadamia Cookies
A family favorite with a thoughtful twist, these dark chocolate macadamia nut cookies are a delicious homemade alternative to store-bought treats. Intentionally less sweet, they bring together the rich depth of cocoa, dark chocolate, and buttery macadamia nuts in every satisfying bite.

Ingredients
120 grams of allulose sweetener
180 grams of all purpose flour
15 grams of cocoa powder
3 grams of baking powder
1 gram of salt
90 grams of unsalted butter (room temperature)
1 egg
100 grams of 70% cacao dark chocolate (either chocolate chip or bar)
50 grams of macadamia nuts
Instructions
In a large mixing bowl, cream the room-temperature unsalted butter until smooth and paste-like. Add the allulose sweetener and salt, then mix until fully combined.
In a separate bowl, lightly beat the eggs. Add half of the beaten eggs to the butter mixture and mix until incorporated. Add the remaining eggs and continue mixing until smooth.
Add the all-purpose flour, cocoa powder, and baking powder. Mix just until the dry ingredients are fully incorporated.
Fold in the dark chocolate and crushed macadamia nuts until evenly distributed throughout the dough.
If using a chocolate bar, roughly chop it into uneven chunks for a more rustic, bakery-style finish.
Cover and refrigerate the dough for at least 1 hour.
Divide the chilled dough into 6 equal portions, or 12 portions for smaller cookies. Arrange the portions on a parchment-lined baking sheet, leaving space between each one for spreading.
Preheat the oven to 356°F. Bake for 25–30 minutes, or until the edges are set and the center is baked through.
For a convection oven, reduce the temperature from 356°F to about 330°F
Remove from the oven and allow to rest for 5–10 minutes before serving.
